Sunflower Seed Energy Balls
Ingredients (makes 10–12 balls):
½ cup sunflower seeds (raw or lightly toasted)
¼ cup sunflower seed butter
2 tablespoons honey or date syrup
2 tablespoons shredded coconut
1 tablespoon ground flaxseed
½ teaspoon vanilla extract
Pinch of sea salt
1 teaspoon lemon zest for brightness
Flaky sea salt for topping
Instructions:
Pulse sunflower seeds in a food processor until finely chopped.
Add the remaining ingredients and pulse until the mixture sticks together.
Roll into small balls, sprinkle with flaky sea salt and chill for 20–30 minutes.
Store in the fridge for up to 5 days.
