Cherry Almond Glow Bars

These cherry almond glow bars combine tart dried cherries, roasted almonds, and dark chocolate chunks in a soft, chewy base kissed with vanilla and honey.

Dry Ingredients

  • 100g raw almonds, chopped and lightly roasted

  • 30g puffed quinoa

  • 30g coconut flour

  • 50g dried cherries, chopped

  • 25g dark chocolate (70–85%), chopped into chunks

  • 1/2 tsp fine sea salt

Wet Ingredients

  • 60g coconut oil, melted

  • 70g honey

  • 2 tsp vanilla extract or 1/2 tsp vanilla powder

Instructions

  1. Roast the almonds at 325°F (160°C) for 10–12 minutes until golden and fragrant. Cool and chop.

  2. Combine dry ingredients in a bowl: almonds, puffed quinoa, coconut flour, cherries, dark chocolate, and salt.

  3. Whisk wet ingredients in a separate bowl: melted coconut oil, honey, and vanilla.

  4. Mix wet into dry until fully coated. Stir in chocolate chunks last.

  5. Press mixture firmly into a parchment-lined loaf pan.

  6. Chill for 2–3 hours until firm. Slice into 8 bars and store refrigerated.
